“Domodedovo Air Service” Catering facility is the only Russian participant shortlisted for the Mercury Award-2003
“Domodedovo Air Service” Catering Facility (Moscow, Russia) is the only company to represent Russia at prestigious international Mercury Award set up by International Flight Catering Association (IFCA) and International Inflight Food Service Association (IFSA). The company got through the qualification and after presenting a new technology in Frankfurt am Main in January 2004 it has been shortlisted for the final. “Domodedovo Air Service” is a nominee in “Systems and Process Development” category.
International (IFCA) was launched in the UK in 1980. The association knits together companies providing in-flight and rail catering. At present more than 600 world companies are the members of the association.
The Mercury Award is the most prestigious in Inflight Catering for innovation and implementing leading-edge catering technologies, and is eagerly sought after by many of the best companies in the industry. The jury is 12 leading catering experts from different countries. Finally 45 companies have been shortlisted. The competition results will be announced during the ceremony of the Mercury Award in Nice on February 20, 2004.
Domodedovo Air Service presents its extended shelf-life technology (ESL), which enables to keep prepared food almost non-perishable for a considerable period of time due to lack of pathogenic bacteria. The technology is in special packing method when pre-packing and packing are performed in a low-oxygen atmosphere. The percentage of oxygen is nor more than 0,1% extending the expiry date several folds. For example, prepared fish storage period is extended almost twofold from 48 hours to 3-4 days. This ensures airlines and railway companies substantial expenses reduce due to possibility of making an order for a return trip.
